THIS WEEK IN THE SHARES:

Carrots – Storage: In an airtight (plastic) bag in the refrigerator. Uses: Raw/Cooked. When to use: Within 10 days.

Collards – Just like kale, collards are super versatile and super healthy. On a scale from 1 to 10, collards are off the charts in terms of nutrient content.  A cancer-fighting, immune-boosting powerhouse!  You can steam it, put it in soups, make a quiche, or freeze the leaves to use in smoothies in the winter….  Storage: In an airtight (plastic) bag in the refrigerator. Uses: Raw/Cooked When to use: Within a week.

Leeks – Storage: In an airtight (plastic) bag in the refrigerator. Uses: Cooked. When to use: Within 10 days.

Salad Turnips (should be peeled) – Storage: Store the greens and the roots separately in an airtight (plastic) bag in the refrigerator. Uses: Raw/Cooked When to use: Within a week.

Rutabagas – The rutabaga oven fries recipe is a winner.  Also fabulous mashed like mashed potatoes.  Storage: In an airtight (plastic) bag in the refrigerator. Uses: Cooked.. When to use: Within 5 days.

Kohlrabi – If the skin feels thick or rubbery, you can peel it off with a vegetable peeler, but otherwise you can leave the skin on. Kahlrabi is delicious raw. It can be cut in wedges and eaten as a crunchy snack just like an apple. Serve it with a creamy dip or add a bit of soy sauce to it. Also can be roasted in the oven with a bit of oil and salt until it turns brown and tender.  Kohlrabi globes will last a few weeks in the refrigerator, but the leaves are more perishable and should be used within a few days.

White Potatoes – These are THE BEST variety for mashed potatoes.  Light and creamy when whipped.
Storage: In a cool, dry, DARK place. Uses: Cooked When to use: Within 2 weeks.

Savoy Cabbage – Storage: In an airtight (plastic) bag in the refrigerator. Uses: Raw/Cooked. When to use: Within 4 days.

SWAP BOX:
GEOF provides us with extra vegetables to seed our swap box every week.  If there’s something in your share that you don’t wish to have, you can trade it for something inside our swap box.  If you don’t like your swap options, then you can simply donate your unwanted item to the swap box, or take that item home with you.  Please note swaps are to only occur with items inside the swap box and your own share.  Only items in their full quantity may be swapped.  Please be considerate of other members and try to limit your swap to one item per week.
